Banana Bread Granola

I am basically obsessed with the My New Roots: Inspired Plant Based Recipes for Every Season cookbook. Sarah Britton is a true original when it comes to edible inspirations, with an insight on Holistic Nutrition that is thought-provoking and enlightening. This book isn’t just about the pretty pictures (although they are definitely mouth-watering to look at). Sarah breaks out her recipes by season and by dish category – which I absolutely love! Although I am totally guilty of jumping all over, since I want to try them all!

This weekend I tried out her Chunky Banana Bread Granola and I can’t believe I hadn’t thought to add in banana’s to my granola sooner – what a game changer for my granola making days. For one that loves banana bread but looks for a healthier alternative with added nutrients – this is it!

Using banana’s as part of your binding agent will change up any of your go-to granola recipes. Sarah’s recipe is spot on and needs no modification, unless you want to add a few alternate ingredients or use what you have on hand. Just don’t skip out on the Banana – this is the absolute key! My personal recommendation for add-in’s are chia seeds, raw pumpkin seeds, crushed raw almonds or chocolate chips for a treat! What would you add? Check out this amazing breakfast dish-

Banana Bread Granola (yields 9 cups)

  • 3-4 very ripe bananas
  • 1/2 cup pure maple syrup
  • 3 cups rolled oats (gluten-free)
  • 1 cup  buckwheat groats
  • 1 1/2 cups unsweetened large coconut flakes
  • 1/2 cup raw sunflower seeds
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1 cup whole raw walnuts, roughly chopped
  1. Preheat the oven to 350°F. Line 1 or 2 baking sheets with parchment paper.
  2. Melt the coconut oil in a small saucepan over medium-low heat. Pour the melted oil into a food processor or blender, add the bananas and maple syrup, and blend until smooth.
  3. In a large bowl, combine the remaining ingredients – rolled oats, buckwheat groats, coconut flakes, sunflower seeds, walnuts, cinnamon, salt, etc.
  4. Pour the maple syrup mixture over the dry mixture and gently toss to coat.
  5. Divide the mixture between the 2 baking sheets and press it firmly with the back of a spatula to ensure that the mixture is compact and even. Bake the granola for 20 minutes, until it’s beginning to brown.
  6. Remove the baking sheet from the oven and use a spatula to flip the granola over in large sections. Return it to the oven and flip it every 5-8 minutes, making smaller chunks each time, until golden, 15 to 25 minutes more. The granola should be dry and crisp.
  7. Set the granola aside at room temperature to cool. Do not stir the granola until it is completely cool so it will set into chunks.
  8. Store in an airtight container at room temperature for up to 1 month – if it lasts that long!! 🙂

The Little Black Bottle – Activated Charcoal

Yes this is now a thing, activated charcoal is the newest health phenomenon. Not to worry, it’s not the same kind used to light up your grill. The activated kind is processed so it becomes porous and ultra-absorbent, making it safe to consume.

The idea of using charcoal in your beauty routine, has been quite the trend over the last year. You might recall my shout out to bamboo charcoal  properties in my beloved Konjac Sponge. It’s properties to draw out dirt and purify complexions has made charcoal an active ingredient in  face masks, cleansers, and creams.

With the juicing trend peaking, more and more juicers are now attempting to apply the benefits of charcoal to our digestive tract. Acting as a strong detoxifier, charcoal will help rid the body of unwanted substances and toxins. In turn, once the body eliminates these toxins, one will see an increase in energy and a better overall health.  There’s also many other benefits associated with hearth health, anti-aging, weight loss, teeth whitening and fresher breath (to name a few).

My favourite variation of this juice on the market right now is the BBQ Apple Pie from Yamchops. It’s sweet and refreshing and is a major immune booster. It’s a must try in my books!

30 Days of Yoga

Whether you are a newbie to Yoga or a Yogi master, I think you will love 30 Days of Yoga with Adriene. While I prefer the challenge and focus of my favourite classes in a hot studio,  Adriene’s YouTube channel has helped fill in the gaps in the comfort of my own home, when getting to the studio isn’t so easy. And surprisingly, her 30 days has been much more challenging than I thought.

This challenge will take you through 30 days of yoga with a 15-30 minute video and minimal equipment required (just your mat and yoga block). The biggest struggle I find with my practice is consistency and getting on my mat regularly. With Adriene’s short video’s, it is almost impossible to say we are too busy. Sadly though, I have found myself skipping out on my regular practice, as summer has been quite full and let’s face it routines are tough and we aren’t perfect. Remember, if life gets in the way from you hitting the mat, don’t get down on yourself, just keep your goal in sight. It’s important to keep focus on the benefits that come with daily practice and to remember a short practice is better than no practice. It is amazing how daily practice quickly improves the clarity of your mind and how your body feels.

Adriene’s mission with the 30 day challenge is to inspire you to find what feels good. To connect with this 30 day commitment to deepen your practice and take the time play. It’s all about concentrating on the fundamentals. And I will  note that she is also a delight to practice with.

With a new season ahead, I am going to start from the top again and commit myself to 30 days. I challenge you to join me and take the 30 day challenge. You will not regret it. 🙂

Beet-Melonade

Last summer I was obsessed with all things watermelon and lime and this summer I am finding my fancy with the blend of watermelon and lemon – yumm so refreshing… After trying YamChops cold-pressed watermelon and lemon juice, I knew I had to start making this one at home; that $9.50 a pop is only justifiable as a treat. Instantly inspired to make my own, I was ready to do just that. Then came my ah-ha moment while harvesting beets from the garden. I thought why not add a few of these red beauties to  pump up the nutrient value for this sweet juice (see their benefits here).

And that is how Beet-Melonade was born. To my anti-beet followers, trust me when I say – you won’t even recognize the beets in this one. Deliciously sweet with a subtle sour tang, this juice is by far my favourite combo this summer and best served cold. Give it a whirl and let me know your thoughts!

Juice or blend half of a watermelon, 1 lemon (I juice with rind) and 4-5 small-medium beets.

Green Melon

Oh Kale Yeah – my beautiful greens have been growing like crazy this summer which has been amazing! Kale everything – salads, juice, smoothies, you name it. In my opinion, you can always add a little extra green to any dish.

I recently saw this recipe floating around and I just had to try it and then I had to share it. Of course, the brilliant Angela Liddon from Oh She Glows can take all the credit for this one. As she puts it, “it’s like a party in your glass” energizing and refreshing. The combination of watermelon and lime helps beat the heat on these warmer days. It’s safe to say that once you add a touch of sparkling water, it can basically be categorized as part of the mojito family. 😉

Ingredients

The great thing about this combination and it’s ingredients, is you really can work with whatever quantity you have on hand and it’ll still be super delicious- it’s kind of a no-fail. For my batch I blended together the following –

Juice of 3 limes, handful of mint, 1 apple, 1-2 cups watermelon, half an avocado, 4 leaves of kale and 4 ice cubes. (yields 2-3 servings)

There you have it, another green belly, another day done – Enjoy my friends.
